Due to its dry climate, practise of agriculture was not a viable option for the Rajasthanis. On top of that, the weather here was extremely hot during the summers. So they had to develop dishes that needed minimum vegetation and dishes that also kept them cool during the summers. And thus began the excessive consumption of green chillies to let the inner heat out!
